I did not cut anything down. use the size you prefer. it'll be smaller or larger. you should know how many people you are supposed to feed from it. about the fondant, I really do not know how to explain it. I just went with it:)you'll figure it out on the way. that;s how it happened wth me. sorry I cannot give more help.
